Please help planning menu for family with diet restrictions

My dad and his girlfriend are coming over for dinner and I am trying to make a really nice meal. She either doesn't eat or is allergic to all seafood. My dad has diabetes and high cholesterol so avoids red meat, fried foods, cheese, and pasta if possible. That pretty much leaves me with chicken -- without the cheese/pasta so no Parmigiana, alfredo, etc. Anyone have a good chicken recipe to try for a formal dinner? Or maybe turkey? Vegetarian? Thanks in advance.

Then you're free to add whatever veggie side dishes you all like. You could make a nice Italian white bean salad if you want something hearty.

Or a roasted pork loin. You could do a garden salad, saute'd spinach with garlic, rice, roasted vegetables.

we just had a delightful Persian dish at our neighbor's (Khoresht Fesenjaan?) that sounds about like this recipe:

Coq au vin is yummy and you should be able to find a recipe that suits.

Chicken Cacciatore or Chicken Vesuvius might work, too, since it sounds like you lean toward Italian flavors.

Real Simple had a yummy recipe for chicken cutlets stuffed or rolled with tapenade and feta. You could use a low or no-fat feta.

To start you might do a thin black bean soup, pureed, with lime juice. Those without cholesterol issues could add a dollop of Mexican crema or toasted cumin seed crema. Your dad could add a bit of plain yogurt, if he likes.

Then roast chicken stuffed with lemons, rosemary, and garlic cloves. Your dad can remove the skin from his portion. Sides of greens steamed then sauteed briefly in a bit of olive oil with garlic and quinoa cooked with veggie broth and herbs.

For dessert, poached pears in wine, maybe?
