Ideas for healthy batch cooking

This week was really rough because I didn't do any pre-cooking or pre-planning the weekend before for weeknight dinners. so it was a scramble home, rush to cook and feed my starving toddler.
So I am going to do some batch cooking this weekend, but struggle to come up with healthy ideas. I think of pastas and casseroles, not exactly healthy eating.

1)marinate chicken thighs in lemon juice sunday - put then in the oven with some baby carrots and halved baby zucchinis Monday = 20 mins

2)make extra broth on the weekend, freeze
make meatballs on the weekend freeze
put meatballs in boiling broth for 1o mins, then add pasta "ears" and such, a few cut up baby carrots, then some green peas for a soup = 20 mins

Honestly, when I'm busy, I just defrost (leave in the fridge from morning) some wild salmon or mahi and throw it in the oven with a pack of vegetables from trader joes = healthy, takes 5 mins to prep and 10 mins to cook.

I am Indian and a lot of Indian curries are great for a couple days. I usually cook in bulk on weekends and only once or twice on weekdays. Look at recipes for chole masala, pav bhaji, mixed vegetable curry.

Also, mixed vegetable rice is easy to put in the Instant Pot in the morning and time so that it will be ready by the time you get home. Make some scrambled eggs on the stove and mix in for a toddler-friendly meal (my 3yo could eat it all day).

Forgot to say, you can make the “mix” for the rice on the weekends and let it sit in the fridge for a couple days before putting it into the instant pot with rice. You can also toss it with vermicelli or rice noodles on the stove
