what to do with a leftover pot roast to serve to a 1 and 3 year old

I have a leftover roast beef with chopped up carrots, onions and potatoes (we actually cooked the dish but never ate it, has been sitting since Friday due to last minute changes in plans).

Anyway, we need to eat it tonight I think or pitch it. Thoughts on what to do to it to make it palatable to a 1 year old and three year old? Any sauces? Chop up and put on crackers? Help! I think in its current form it won't fly.

Beef noodle soup! Chop it up, add some cut up carrots and potatoes and green peas (the ones cooked with the pot roast may be a little mushy by now), add beef broth, some thyme and garlic, and your kids' favorite noodles. Or, if your kids don't like "chunks" other than meat, chop up the beef, set aside, cook the broth with the veggies, then puree and add the beef and noodles.

You might want to try making Shepherd's Pie out of it. I don't know what form the potatoes are in but here is what I would do.

Chop up the beef and carrots. Saute a diced onion in some olive oil, once the onion is browned, add 2 tbs of flour, mix the flour with the onion and oil. Add beef broth, bring to a boil and let it thicken. (if it doesn't thicken use 1 tbs of corn starch dissolved in 1-2 tsb of water and add to the broth and onion) Once sauce is thickened add the beef, carrots and some defrosted frozen peas (and corn or green beans if you have them). Heat ingredients through.

Put the mixture in a casserole dish. Mash up the potatoes like you were making mashed potatoes and spread them across the top of the beef mixture. Put in the oven at 350 for 15-20 minutes.

You can also put cheese on top of the potatoes. Yum!

I've done this with leftover brisket and with ground beef that was not leftover.
