My kids will eat vegetables if I "slip them into" things like fried rice (peas and carrots), cottage pie (corn, peas, carrots, and green beans), or Thai Kapao (cut-up green beans). Are there other dishes out there that mix the veggies into the dish so the kids don't really notice them?

Shredded carrots and spinach in meatballs or meatloaf?
This is a puree, but I make tacos with pureed green peppers and zuchinni. I brown the ground beef then add the puree and cook with spices. It tastes delicious! Soup? Lots of ways to make veggie soup. Sloppy Joes with green peppers and shredded carrots? |
I add shredded zucchini (making sure to drain out excess water) to turkey burgers. It makes them really moist and delicious.
I add baby vegetables (literally from the jar) to tomato sauce and make the kids pita pizzas. Delicious!
My children actually like minestrone soup, so I chop a lot of vegetables very fine and slip them in there. The tomato sauce really obscures a lot.

These are delicious; I adapted by using half whole wheat flour, not using meat, and adding a couple of teaspoons of sesame oil. Chop up the veggies super-small. My younger son, who eats NOTHING, liked them.

How about a whole wheat tortilla, with melted cheese and spinach?
Anytime 3.75 yo DD says she doesn't like a dish made with a tomato based sauce, we tell her it's ketchup. For example, pasta with meat sauce is meatballs with ketchup.
