Here is how I do it.
-throw the mussels in a pot of water, let them soak for 20 minutes. -saute some shallots and garlic in butter/olive oil -add a finely chopped onion, saute until translucent -i add rosemary and thyme, salt and pepper -add the mussels after you have gone trough each one carefully, to make sure they are shut tight, and pull off any beard -gently mix to incorporate the onions, and such all around the mussels -add 1 C white wine....bring to boil, I usually do about 6 minutes. -they should be wide open. I usually stir 1/2 way through the 6 minutes, to make sure the weight of some of the top mussels isn't preventing the lower ones form opening. Yummy, server with a crusty bread and/over linguine. |

Here are 3 ways to do mussels that are fantastic:
1. White wine and garlic - saute garlic, add white wine and mussels 2. Saute a bit of garlic and tomato, add mussels, serve with pasta 3. Saute some shallots and lemongrass, add a bit of coconut milk and red curry paste, add mussels. |
