substituting shitakes for regular mushrooms - cooking time?

Anonymous
I'm making a recipe tonight that calls for regular white mushrooms. However, in the pre-storm madness there was a run on mushrooms at the grocery store and all they had left were two packages of shitakes! I actually think shitakes might give the recipe a nice new flavor so I'm excited about that, but I've never cooked with shitakes before. Is their cooking time about the same, or more or less, than button mushrooms?

Shitakes may take slightly more time because they are a little tougher. Also, be sure to remove the stems (though they make a good mushroom broth).

Good luck.

if you remove the stems (you should) i actually think the cooking time will be shorter. they're flimsier than button mushrooms esp if you slice them. if you overcook them or overdrench them they turn to mush.

Did it work? I've never tried to substitute shittakes before b/c I thought their flavor would be too strong compared to button mushrooms.

OP here - my husband ended up cooking instead of me, and just followed the usual recipe and the shitakes tasted great!
