Looking for new ideas for dinner and would love to hear what everyone is eating for dinner this week.

Tonight - baked ziti (made yesterday)
Tomorrow - black beans & rice
Wednesday - pecan-crusted tilapia w/rice and salad
Thursday - chicken w/spiced apples
Friday - homemade pizza

split pea soup and biscuits
don't know further than that!!

to pp- where do you get your tilapia? I just got frozen tilapia from TJ's and it was awful.

This week for us:
- last night - disaster with tilapia
mon - mulligatawny soup
tues- tamales and beans
wed - chicken in crockpot with vodka sauce served with pasta
thurs - stir fry chicken w/ veggies
fri - pizza

Just made a Mexican style casserole that couldn't be easier.

In a lasagna dish, pour a little salsa on the bottom. Layer with flour tortillas, black beans, cooked spinach, salsa and shredded cheese. Repeat layers. Top layer is usually just salsa and cheese.
Cover with tin foil. Bake in a medium oven til bubbly-about 25 mins.
My family loves this.

Whole foods has good tilapia.

19:19 here. We live in Silver Spring and buy it at Snider's. I tried TJ's frozen tilapia once, and ick.

This is the recipe I use - my kids like it. I don't pan-cook it; I bake it at ~375* for a half-hour or so.

Sunday and Monday - Pasta Fagioli
Tuesday and Wednesday - Chicken thighs braised with balsamic vinegar, mashed potatoes
Thursday - Sushi night!
Friday - Stir-fried veggies and potstickers

Do most people make a new meal every night? I always aim for at least a day's worth of leftovers to save on cooking time.

OP here. I definitely don't make a new meal every night. I love having leftovers because then the days where I don't have to cook I can exercise or get something else done. Indian food tastes even better the next day so I usually try to make an Indian dish at least once a week.

OP here. Finally, got my act together for the week.

Mon- Lentils with Basmati rice
Tue- Moroccan Tilapia, Steamed Asparagus, Couscous with pinenuts
Wed- Roasted Chicken with Balsamic Vinegar, Roasted Herb Potatoes
Thurs-Leftovers
Fri-Salmon Cakes with assorted steamed veggies

tonight we had chicken breast cut up and sauteed with trader joe's thai red curry sauce, brown rice and green beans
yesterday we had stuffed pork roast florentine (also TJ's) with green beans and risotto
monday pf changs take out
sunday I roasted a chicken, sweet potato fries, some veggie I cant remember, and I made chicken soup out of the leftovers, maybe I roasted the chicken on friday and we had soup over the weekend

Last night: roast pork tenderloin, threw some carrots, potatoes and frozen pearl onions in with the pork. Would have been better if I had the time to chop fresh rosemary and sprinkle over all.

Tonight: Beef and Bok Choy stir-fry from a recent Real Simple magazine. Yummy. Have made it before but this time bought the beef for stir fry already cut up and the fresh ginger from the tube, so even faster.

Last night & tonight: Gingered pork with bell peppers, onions over rice! DH made it (shocking) and it was yummy!!

Tomorrow-Brisket, potato salad & beans. DH is VERY excited. He is like a kid at Christmas! He is tracking his order hourly!! Thank god a couple of places in TX will ship!
