| I tried to make latkes tonight but they completely fell apart - the finished product was essentially cooked shredded potatoes. I tried to pinch them into little balls with my fingers and fed them to the baby. She liked them, but it wasn't very easy for her to eat, and they basically fell apart on the way to her mouth. I'm wondering if there's any way to roll them into stickier balls and bake them tomorrow. My only idea is to dip them in beaten egg and roll in breadcrumbs, but I don't even know if that would work. Any ideas? |

what recipe did you use?
I would try beating one egg, adding a bit of flour as a binder, and adding the shredded potato mixture and making a patty. |
Agreed. My mother sometimes does this to turn leftover mashed potatoes into latkes. |
| Maybe you turned them too soon? I make sue there is enough oil in the pan, put a teaspoon full in the pan and gently press down with back of fork. You have to wait until the edges are brown before you turn them. Hope this helps. |
| OP - I think my problem was too little oil. I was trying to make them healthy so cooked in a non-stick pan with a little olive oil spray. Must be the oil that holds them together. I haven't made latkes in years - oh well. |
