I have to take something to my work "breakfast" potluck. It has to travel in the car with me for ~ an hour and I'd like to make it the night before. I can make anything, baked goods, casserole, etc. I want to make something impressive (read = really tasty).
We only have a microwave at work for reheating. No oven. Any great ideas? I was thinking of a strawberry strata but it might be better really hot and I don't think I can accommodate that! |

| Challah french toast. Slice up a loaf of Challah bread, each slice about 1 inch thick. Mix 5 eggs, 1/2 cup milk, 1 tsp of vanilla, dash of cinnamon, dash of nutmeg, a little orange zest if you have an orange handy. You can cook it up the night before and heat it in the microwave the morning of. Serve with powdered sugar and maple syrup. |

If you have an insulated carry bag, you could make a breakfast casserole. Assemble the night before, refrigerate overnight, pop it in the oven before you shower and dress (takes ~45 minutes, I think). Put it in the insulated bag with a hot pack.
I don't have the exact recipe, but there are probably lots online. The gist of it is: * place ~6 slices of bread in the bottom of a casserole dish * sprinkle with cheese and cooked sausage * pour egg and milk mix over it |
I was going to say the same thing. There are a ton of strata recipes on allrecipes.com. I'm a big fan. |
