Cookbook - quick and easy meals?

Any suggested cookbooks for quick and easy meals? We want to cook at home more for health and budgetary reasons, but are really struggling trying to find weeknight recipes.

The Six O'Clock Scramble by Aviva Goldfarb. It has been a great cookbook for our family!

I know Rachel Ray annoys some people but I have had good luck with her recipes for quick weeknight meals.

Though this isn't a cookbook, I would also suggest checking out the Cooking Light website, particularly the Dinner Tonight section. Those are all quick, easy, healthy meals.

Great dishes that are extremely tasty and some recipes kids like.

Mark Bittman's How to Cook Everything (also has a vegetarian version). Not about speed so much as about minimizing the number of ingredients and prep, though many of his recipes are fast. He writes the minimalist column in the food section of the NYT.

You have to check out "Bake Until Bubbly" I love this book! So many easy and truly delicious meals.

I would also recommend Madhur Jaffrey's Quick & Easy Indian Cooking. Once you have a few key spices in your pantry, it won't be intimidating to cook these meals on weeknights.

Another super happy 6 o'clock scramble family here. My picky kids devour almost everything and ask for more. We have the cookbook but there is also a service where for a few dollars per month you can get the shopping list for the week, additional recipes, etc. There are some recipes posted on the website, definitely give it a try. The cookbook is set up seasonally and you start at the beginning and go through without repeats. She also has suggestions for veggies and sides. Really, at worst it's fine and many are super yummy. It's also a way to support local WAHMs and there is nutrition advice, ideas for kid's lunches, it's a great resource.

OP here. Thank you for all the great suggestions! I am going to try a few of them and go from there. Love that there is a quick and easy Indian cookbook - who ever would have guessed it?

Express Lane Cookbook: Fast, Healthful Meals with Mimimal Cleanup. All the recipes use 10 ingredients or less (hence the "express lane")

I love Madhur Jaffrey's Quick & Easy Indian Cooking, but not all the recipes are quick or easy enough for me to cook on a weeknight.

Mark Bittman also has a Quick Cooking version of How to Cook Everything (http://www.amazon.com/How-Cook-Everything-Quick-Cooking/dp/0764525115/ref=sr_1_13?ie=UTF8&s=books&qid=1260554772&sr=8-13). Don't love his stuff, but it is a good starter.

I think the Rachel Ray books have tasty recipes, but 30 minutes isn't exactly true. It is 30 intensive minutes, after you have everything prepped. It takes me a while to dice, measure, etc. And the recipes often assume you have two 12-inch skillets. Not many people do.

Real Simple often has quick and easy dishes.

Friends have shared some really yummy and healthy recipes from Weight Watchers that are really quick. Vegetarian Black Bean Soup is our new fave and only takes about 20 minutes.

Our weeknight meals can get a little boring, but they are often just meat on the grill (vary the marinade) and a steamed veggie.

Crock pot might be your new best friend, too.
