I'm looking for cookie recipes that accommodate DD's food allergies. Everything seems to have a stick or two of butter and/or nuts (she is allergic to all dairy, tree nuts and peanuts). The only cookies it seems she can have are meringues. Do you have any good dairy free - nut free cookie recipes? Is shortening an acceptable substitute for butter in cookies? Or should I do a combo of soy margarine and shortening? Or a combo using vegetable oil and shortening? Thanks!

You never have to add the nuts to any cookies. As for butter, you can use any of the dairy free (soy based) butters as a substitute.

search for vegan cookie recipes. vegan cookies are one of the few baked goods without dairy and animal products that i think are passable for a meat eater like me.
by the way, oreos are vegan! no dairy.
