I have -- and regularly use -- Jacques & Julia, which is based on her partnership with Jacques Pepin. It's classic french dishes, well-written with lots of photos, and a sidebar from each of them on their own take or trick with the recipe.

We have The Way to Cook. It's one of our top five cookbooks. We use it as a reference even when cooking recipes from another cookbook.

I like Baking with Julia - lots of good information, although I have to admit I've had it 10 years and still haven't try the more complex recipes like croissants. Maybe that will be one of my New Year's resolutions.
