cookies burning on the bottom

can anyone give me pointers to avoid this? i am letting the oven preheat to the proper temo and placing the cookie sheet in the center of the oven...

get silpat baking mats (cheaper version = silicone sheets which I have) + no burning ever again...

Turn it down, 25 degrees, it's too hot. Using parchment on the sheet can help if the shortening/oil spray is burning.

Is your cookie sheet very dark? Dark cookie sheets promote browning. Maybe you should try a lighter gray sheet?

Definitely put parchment paper down on dark cookie sheets. It could be your oven. I actually found that baking the cookies too slowly promotes burning. Have you read the cookie section in Dessert University by former White House pastry chef Roland Messnier? I used to put his molasses chocolate chip cookies on the top rack and they turned out perfectly. Definitely experiment with oven temperature. Oh, and do you turn the cookies halfway through to help them cook evenly?

Use high-quality, insulated cookie sheets - inexpensive and/or dark ones seem to result in more burning.

And yes, turn the sheets around halfway through baking time.

Parchment paper, which is inexpensive, and located near the aluminum foil in grocery stores, or Silpat sheets, which are more expensive, but reusable, and found at cooking/baking stores (also bed, bath, and beyond).

Do not leave them on the cookie sheet to cool. They will continue to cook. Move them to a wire cooling rack as sooner as they come out of the oven.

Silpat or parchment, rotate cookie sheets, and cool on wire rack = perfect cookies!

Yes - I check them toward the 9-minute point by using a spatula to lift one up and when they are perfect I yank them out of the oven and transfer them to the wire racks immediately.

Parchment paper and don't let them stay in there as long.

I like aluminum cooking sheets. You can usually find them at Sur La Table, I don't always see them at Bed Bath and Beyond.
