How are you using your Thanksgiving leftovers?

So I just made an odd dish from leftovers. Cut up the leftover green beans, some turkey and put it in a small pot. Added chicken broth, salt, pepper and a garlic clove. Threw in a scoop of mashed potatoes and wisked everything together. Came out with a surprisingly good soup!

Sounds good! We had Thanksgiving II last night for dinner (just ate straight up leftovers, warmed) and then I made the usual "thanksgiving sandwiches" for today's lunch (put everything that's leftover on bread, smeared with mayo and cran sauce) and, since we polished off EVERYTHING but the turkey by this evening, we ate a quick bite at a diner (pancakes!) and then came home and made turkey nachos.

I based my turkey nachos off of this recipe and used Nature's Promise (or whatever that organic brand from Giant is) salsa. Holy lord, best use of thanksgiving leftovers, EVER!

Gosh, wow, Slate, thank you for determining what tastes good to me! I never knew that a magazine might know my preferences better than I do, or that I was doing something foolish by trying to jazz up leftovers that everyone else is tired of! What a dumb piece.

I made a pilaf with the leftover turkey, stock, and pan drippings. I added some ham bits, peas, mirepoix, and a few of the remaining brussels sprouts. Now I have dinner for the next few nights.

i like to make a gobbler sandwich.

toast some bread, spread some mashed potatoes and butter, cranberry sauce, turkey. so good.

Sautee'd onions, celery, and carrots for five minutes. Added a box of chicken stock, a sprinkle of thyme, and a bay leaf. Tore up turkey and added half a cup of rice. Simmer for 20-30 minutes and you get yummy turkey soup!

We're at a loss as to what to do with all the ham left over though. We had Thanksgiving II, but there's still a lot left.

split pea and ham soup? put it in a sandwich? cube it up and put it in salad?

So far, we have made: turkey salad with fennel and green apples over a bed of arugula and turkey enchiladas using Trader Joe's enchilada sauce. We plan to use some frozen turkey later in barbecue pulled turkey sandwiches.

Turkey-leek quiche is a fantastic blend of flavors, and very easy! Doesn't use up much turkey, though...

We don't generally have so many leftovers (certainly not so much turkey) that I need to think about this.

Maybe we need to cook more food for Thanksgiving.

Just made Turkey Tetrazzini (sp?) tonight - mushrooms, peas, egg noodles, cream sauce, bread crumbs - the kids couldn't get enough of it.

For the ham, what about cubing it up and putting it in an omlett or fritatta with some veggies or cheese? Or on a pizza with some pineapple?

Mashed potato/turkey pot pie - just mixed leftover mashed potatoes, cubed turkey, threw in some frozen peas and cooked carrots, spread it in a pie pan and added a pillsbury roll out crust on top. I heated the filling in the microwave before adding the crust, and baked the whole thing in the oven for about 30-40 minutes. Served it with leftover green beans and cranberry sauce. Quite delicious and very easy.
