| 1 week after delivery we're bleary eyed & basically grazing instead of eating real solid meals...Any ideas for quick easy recipes that might last several nights? (& remotely healthy too) TIA |

Making lentils soup or stew is really easy (and my children love it).
You can double a recipe and freeze some - or just have some today and another night later in the week. |

pretty much any kind of pasta works well for lasting forever and keeping in the freezer. lasagne, spaghetti, baked ziti...
and soups. chicken soup, potato and leek soup, carrot soup, beef stew... |

Do you have a crockpot? Hey, if not, now is the time to get one (lots of sales on them).
Non-crockpot easy meals- Black Bean Tacos (just heat up a can of beans and add some cumin, onion powerd, garlic powder and chili powder) - serve with tortillas, corn, rice, salsa (maybe chopped up tomatoes). - Tortilla pizzas. Just use a tortilla as the crust, as about 1-2 TBS of sauce, cheese and toppings of your choice (easy to adjust for kids, I do cheese for my son and feta and green olives for me), bake at 400 for just a few minutes. - Chili. Buy a pack of chili mix and it will have a recipe on it. My 2 year old will eat mild chili. I also serve with rolls, cheese and fruit, which he can make a meal out of if he is in an "anti-chili" moood. Crock-pot- Chicken tacos. 1.5 pounds chicken, 1 can of diced tomatoes, 1 pack of taco seasoning. Cook on low for about 6 to 8 hours (I've left it cooked closer to 10 and it's fine). - Lots of good recipes on this sight http://crockpot365.blogspot.com/ Some specific recipes from that sight are - Vietemese Chicken (buy boneless, skinless thighs or use breasts to save time, I've also doubled the sauce and added carrots and onions - almost a complete meal) - Rotissie Chicken (more time consuming) - Peanut butter porkchops - Peking Pork chips - |

Chicken and Spinach Salad: Marinate chicken breasts in fat-free salad dressing (we use red wine vinagar) in the fridge for 1 hour. Put under the broiler, about 7-8 minutes a side depending on how thick they are. Cut in slices and serve with a bag of fresh baby spinach, cut up a tomato/cucumber, and get some feta crumbles to throw on top. We do it a lot more in the summer, though.
We also get bags of ravioli from Costco (spinach/mozzarella, shrimp/garlic) and we keep tomato sauce in the house for a quick meal. I just throw in the ravioli right from the freezer and nuke the pasta sauce in a bowl. |

I tried black bean tacos for the first time tonight - I'll have to use your recipe next time, 12:37 - yum!
I sauteed onions in a little olive oil and some of the liquid from the can of black beans. Then I added the rinsed black beans, taco seasoning, and a tiny bit of water. I used crispy taco shells, baked them for 10 or so minutes, then put reduced fat shredded cheese in the bottoms of the shells, added the black beans, and some salsa. Ta-da! |
