Does anyone have a very basic, simple sweet potato recipe?

I would like it to have sweet potatoes, butter, brown sugar/and or vanilla extract, and topped with marshmellows.

I really just need help with proportions of these things. Every recipe I find online seems to want to add some fancy liquore, or eggs, pecans, juice or fruit....and I would love something more basic. Does this exist or should I just wing it?

Or, are eggs a must? I can do eggs if I can still keep it simple. Thanks!

My Mom made this every year for Thanksgiving when I was growing up and I make it now, not a "modern" or healthy dish...but yummy and indulgent!

2 lbs. sweet potatoes
1/2 stick butter
3/4 to 1 1/4 c. sugar, depending on sweetness of potatoes
3 eggs
3/4 c. evaporated milk
2 tsp. vanilla extract
1 tsp. powdered cinnamon
3 tbsp. dark rum (opt.)
1 lb. marshmallows
Wash and boil sweet potatoes in their jackets until tender. Peel, then add butter while potatoes are still hot, and mash with a potato masher until mixture is smooth. Add sugar, stir until well mixed. Then add eggs, one at a time, beating mixture well until all 3 eggs have been added.
Stir in evaporated milk, vanilla, cinnamon and rum if desired. Pour into a buttered 2 quart casserole and bake in a preheated 375 degree oven for 30 minutes. Top with whole marshmallows and continue baking until browned. Serve hot. Yield: 8 servings.

I make boiled sweet potatoes mixed w/a hand blender with butter, brown sugar and concentrated orange juice (sometimes cinnamon and/or nutmeg), then baked with marshmallows on top. It's really good. Sorry, don't have the proportions on hand but you can eye ball it and taste it as you go.

We just roast sliced sweet potatoes in the oven for a few hours. They're awesome.

Every year, I wing it with a new recipe and they always turn out yummy.
The easiest one I have done (I made it up so I have no measurements)
Peel skin of yams and you can either boil it as is or cut in thick slices and boil until almost tender (al dente).
Layer a baking dish with one layer of cooked yams
Layer bits of butter
Layer with brown sugar
Repeat process
Top with more butter and cinnamon, and marshmallows
Bake at 350 until the marshmallows are golden.
SOOO EASY.

Or you can do baked sweet potatoes.
Wrap in tin foil and bake like a baked potato.
Cut in half and top with what you want (served like a loaded baked potato)

I think eggs help to add to the light whipped feeling of the potatoes but they're not necessary.

You can wing it with the ingredients you listed. Just be very liberal with the butter. You could even use maple syrup.

I wing it by taste. My great grandmother made these amazing sweet potatoes but never used a recipe.

-boil sweet potatoes, then a stick of butter, brown sugar, cinnamon, nutmeg,vanilla and a little milk. Mash all together. Top with marshmallows and bake until golden brown.
