What kind of bread do you use to make stuffing?

I'm thinking of making it from scratch -- does it really taste better if you use fresh bread instead of Pepperidge Farms breadcrumbs? If so what types of bread taste best?

Yes. I usually use a large white Pullman loaf.

Cornbread! homemade, so it's not as sweet.

I've also used a mix of pumpernickel and white, and mixed in a cup of cooked wild rice. Yum.

I use a white bread like an Italian loaf. The trick is to toast the bread cubes in the oven before combing them with the other ingredients.

Last year I made a stuffing recipe from Williams-Sonoma that called for biscuits. It was delicious but so rich I could only eat a teeny bit (probably not a bad thing).

For a very rich stuffing, or one that is great with cranberries and pecans as a side dish, try brioche!
