recipe for egg-free sugar cookies?

My nephew is coming for a visit, and I thought it would be fun to bake cookies with him. Preferably sugar cookies that we could roll out and cut into different shapes. Does anyone have a recipe for a good sugar cookie dough without eggs, nuts, or soy? He has serious food allergies to all three...

i think it's easiest to make eggfree cookies with ener-g egg substitute. it's a powder you can buy for eggless recipes and you won't even notice the missing egg in cookies.

You could make a shortbread dough. It's just sugar, butter, and flour.

We just made Halloween cookies with the Cherrybrook Farm mix which is free of the allergens you mention and it was pretty good. It makes a small amount of cookies, too, which was nice because we had fun but not too many leftovers. (It made about 15-16 good-sized shaped cookies.)
