I don't know - just wanted to say my parents who live in Richmond used to have a friend who did this out of his home, and we got one every Thanksgiving for about 5 years. They are delicious.

I am NOT into fried food so I just didn't eat the skin, so if there are other family members who are skeptical they will still be happy. It just adds a great flavor and keeps it from being dry. Not that you asked or anything just wanted to add that!
