Entree salad ideas

I'm having a friend over for dinner this week who is on Atkins or some similar low-carb diet. I was thinking of making a hearty entree salad but I'm blanking on anything beyond a chicken caesar or something like that. Any ideas for more interesting options would be appreciated!

DH and I have "Big Salad" for dinner about once a week. We just throw in a lot of veggies - tomatoes, avocado, peppers, cucumbers, as well as croutons, dried cranberries, garbanzo beans, whatever is in the cupboard. Also usually add chicken slices. Toss with some spices like lemon pepper, dill and salt and pepper and voila!

Cobb salad is the only one worth eating. Chicken, bacon, avocado, tomatoes, bleu cheese (although I hate it and use whatever shredded stuff we have on hand).

Agree Cobb is great for Atkins b/c you're allowed to have all the fattening stuff (bacon, bleu cheese). Plus, Cobb salads are just delicious!

I also make a "southwestern" one frequently - lettuce, tomato, red onion, avocado, corn, black beans, shredded cheese, grilled chicken. Really good and easy.

I always like a "steak salad". Sliced grilled steak on top of some mixed greens dressed with a garlicky vinaigrette. Crumble some blue cheese on top.

We do spinach salads with chicken. One bag of baby spinach, chopped tomatoes, chopped cucumbers, crumbled feta, any low fat salad dressing. I marinate chicken breasts in fat free red wine vinegar salad dressing in a zip-lock bag in the fridge for one hour. Take out and put the broiler on hi, and broil the chicken 8 minutes on each side, give or take (put aluminum foil on the pan for easy clean up). The chicken comes out moist and tender and it is a light healthy dinner.

We have 2 dinner salads we have often

BBQ chicken, corn, black beans, tomato, cucumber, shreaded cheese, lite ranch dressing

Grilled sliced steak, apples, walnuts, dried cranberries, blue cheese, tomato, cucumber the creamy balsamic dressing

OP, if your friend is on Atkins and just starting she's very limited in the amount of veggies she can eat -- just two cups a day. You might be better off just serving a meat entree, like grilled steak or chicken, and a veggie or salad side.
