Lemon oregano chicken, with a warm salad of roasted potatoes and baby arugula. If it sounds good, it's super-easy and I'll post the recipe.

The recipe serves one. Double/quadruple as needed. Add about 15 minutes cooking time.

Omelettes are quick and easy. I'm also a fan of assemble-your-own-tacos, though you (I) pretty much always need to make a trip to the store for that meal.

(I, however, no longer cook. That's the upside of having your mother-in-law move in. I don't know what we're eating, but I'm sure it will be plentiful and delicious. )

Tonight I made parmesan crusted chicken - very easy recipe I'm happy to post if anyone is interested.

Slightly different question: I'm going back to work and my husband and I will never eat a homemade, non-microwaved dinner again unless I make some food on the weekend that I can cook or heat up during the week. The following are my only dishes that either (1) make ahead, or (2) freeze really well and can be saved for later:

spaghetti & meat sauce (well, the meat sauce is made ahead)
chicken & wild rice casserole w/ mushrooms & almonds
enchilada soup
turkey chili
tarragon chicken salad (good for weekly lunches)

I'm happy to share these if anyone is interested. Any one have other suggestions with recipes?

Just had a nice dinner tonight. Bring the whole family, but 1 coupon per person, so you have to have everybody with you when you order.

I heated up leftovers from a dinner party last night - southwestern burritos with corn, black beans, spinach, fake chiken etc.

I did a pineapple chicken stirfry (carrots, celery, snow peas, chicken, pineapples, add a sauce of 3 TBP pineapple juice, 3TBSP soy sauce, 1/4 tsp dried ginger, and 1 TBSP cornstarch).

What makes stir-fry easy in my house is a have a programmable rice cooker. I thought these things were ridiculous when I first saw them, but to be able to program something so that the rice will be ready and perfect when dinner is cooked is just priceless. Then I only have to focus on the stir-fry.

Tommorrow is black bean tacos, corn and leftover rice.

19:05 - give it time, he might surprise you! Although say goodbye to a balanced meal...meat plus 2 types of pastas/carbs are ok in the guy-world.

OP: We try and stick to quick meals (<30 minutes). Our favorites:
- peanut chicken satay stir-fry with orange-scented jasmine rice (rachael ray, foodnetwork.com. skip the garnishes, use a food chopper for the ginger - or buy it pre-chopped - and throw in some snow pea pods). the peanut sauce is very accommodating when you're out of 1 or more ingredients.
- steak with mashed yams and steamed broccoli. or, steak 'a la manly man' (see foodnetwork.com) - it is a blue cheese sauce that's delicious and simple, and we just cook noodles and have it over everything.
- pre-marinated pork roast with cous cous & a veggie
- risotto with shrimp (if my husband ate them, I'd add peas too)
- jambalaya (the new orleans boxed mix is great) with andouille sausage and grits on the side
- chili (ground beef added) with cornbread
- homemade pizza - buy pre-made frozen dough and defrost in the morning. invest in a cheap pizza stone and try putting the sauce on top of the cheese for less sogginess.
- steak or shrimp caesar salad with garlic bread
- ahi tuna salad - when sashimi-grade tuna steaks are on sale, we sear them with a peppercorn crust (very rare) and have them over spinach salad with ginger dressing. mmmm...

Kimchi Jigae


1-1/2 c. Kimchi (older more sour kimchi is best for flavor
2 Tbsp. sesame oil
1 c. Kimchi liquid
1/2 of an onion
4 cloves of garlic
2 C. boiling water used to reconstitute a handful of dried mushrooms
2-3 Tbsp. gochugaru (dried hot peppers- Korean market purchase)
2 Tbsp. Anchovy Powder
2 Thinly sliced pork chops.
1 pkg. extra firm tofu

Chop kimchi into bite sized pieces; reserving a cup of the liquid.

Rinse, drain, and cube tofu.

Smash, peel, and mince garlic.

Slice onion.

Brown meat in oil, add sliced yellow onion; cook for 2 minutes.
Add garlic, cooking another minute. Add kimchi cooking until kimchi softens; about 2-4 minutes.

Add water, mushrooms, anchovy powder and dried pepper flakes.

Add tofu and boil until kimchi is soft.

Serve over rice
