I have a couple bunches of broccoli that I'd like to serve but my kids don't like it plain. Does anyone have a good broccoli casserole or other type of dish that "hides" the vegetable? For instance, I can get them to eat carrots, green beans, and peas if I "hide" it in shepherd's pie.
Cream of broccoli soup? It doesn't exactly hide it but if you buzz it in the blender, it's just green soup.
chop it up into fairly small bits, combine with sliced potatos, and cover with melted cheese.
i agree, the melted cheese usually helps our little one to eat it
meat/turkey loaf.
I make broccoli and cheese soup for my toddler and he loves it. Just chop broccoli and cook with chicken stock, diced potatoes and a crushed clove of garlic. Sometimes I add the white part of a leek too. Whiz the soup in a blender then reheat and stir in shredded cheese until it melts.
Pesto? It's green.
I've never heard of pesto with broccoli in it.

I guess if you think of pesto as ground up green stuff, you could call broccoli cheese soup a cheese broccoli pesto.
Semantics. It's like "watermelon ceviche" |
Quiche? With eggs and cheese, you barely taste the broccoli.
same here my kids love broccoli soup with crusty bread to dip into |
