Quick question: no way to say it and it not sound stupid, so here goes. Is the "big" UNC soccer school UNC Greensboro or UNC Charlotte?

Whenever you hear just "UNC", "North Carolina", or "Carolina" referencing a college, you can assume it's UNC Chapel Hill.

Google is, but sometimes the results are not straightforward. There are other UNCs and they too have soccer programs.

I am an alum, and I don’t. I simply say Chapel Hill. The other UNC campuses are pretty large and have distinct identities - Charlotte, Asheville, Wilmington, and Greensboro and probably some others that have popped up since I was there in the early 90s.
