| I am making a quiche that calls for tarragon...don't have it. Any ideas? The quiche has artichoke hearts in it. Thanks |

| Well, fresh tarragon has a very distinct anise flavor. Thyme or marjoram will probably taste fine in a recipe that calls for tarragon, but they won't taste anything like it. Fennel (the feathery tops, actually) would be a better sub for tarragon, I would think. |
| Agree that tarragon has its own distinct taste. You can probably just leave it out entirely and just season to taste with salt/pepper. Not sure about thyme in a quiche, but marjoram (like a sweet oregano) might be nice. |
