Dinner for One

DH is out of town for a few days and it is just me and the baby. What do you make for dinner when it is just yourself and you are on the lazy side? I used to do a lot of frozen dinners, but no longer have any interest. (When DH is here I happily cook, somehow it seems like a waste pulling out pots for just me!)

Eggs & toast. Jarred sauces of Indian food and just dump a can of chick peas in it, simmer, throw some rice in a pot or else get store-bought naan. Sometimes I just have cereal. Beans-salsa-cheese burrito. Grilled cheese and soup from Whole Foods.

I'm pretty lazy when I'm just feeding myself. I have been known to eat toast w/ PB & honey for multiple meals, or toast w/ avocado if we've got it. Maybe cereal. Basically anything easy (which somehow often means breakfast foods.) Cheese and crackers, maybe with a side of edamame. Actually, I've been known to make dinner our of nothing but a big pot of edamame.

Basically, eat whatever you want that sounds good and don't feel guilty about.
