If you like strong tasting things (goat cheese, smoked salmon)

I just made the most delicious spread.

Half of a huge log of goat cheese
a generous handful of fresh baby spinach, chopped
a shit ton of capers
juice of 1 lemon
black pepper
a little more than half of a 4 oz. package of smoked salmon

I put it on Wasa crackers. SO GOOD!!!

There. I knew I should not have read your post, but did it anyway, probably because I like to suffer.

Being pregnant (and also not toxoplasmosis immune), I am not supposed to consume soft cheese, fresh spinach, or cold smoked salmon.

Aaagh! Now I'm craving your delicious spread.

Aw, I'm sorry! I remember that well. I didn't know you could be toxoplasmosis immune let alone know that you were or were not! Can you elaborate?

Toxoplasmosis is a parasitic infection that affects many mammals, its main reservoir being the cat. In immuno-depressed persons such as pregnant women, infection can lead to severe illness, and can also cause the fetus to die.

Toxoplasmosis is not as well-known in the US as the risk of listeria or salmonella for pregnant women, probably because a majority of people have already been infected and are immune as a result (the baby is then safe, too). But testing for toxoplasmosis immunity is routine at the first OB visit.

For some strange reason (even though I have had contact with cats, etc), I have never been immune to this. Foods to avoid are mostly uncooked or unpeeled fruits and vegetables because farm animals/cats can so easily pee on them before they reach the store, thereby depositing parasites. Simply washing veggies is not precaution enough, apparently.

Wow! I thought I knew it all when it came to scary things that can happen when you're pregnant. I wonder if they tested me? Hmm. I'll ask the next time I get knocked up!

i love anything with shit tons of capers!!

my question is...will one half log of goat cheese be enough to bind 2,000 pounds of capers?
Anonymous
Did you blend it/ put it in food processor? Sounds delicious but I'm a clod in the kitchen, so I want to make sure I get it right.
Anonymous
No blending! I rough chop the carrots, spinach, and salmon. That's it!

Carrots? Now there's carrots?

I am insane in the brain. No carrots. Did I mean capers? Yes. Sorry, capers.

I'm pregnant. No one told me about avoiding fresh spinach. Is that an e-coli worry?

You can eat soft cheese as long as it is made from pasturized milk, you have to avoid cheese made with raw milk
