I'd live to add to our list of easy, cold salads
A few of our go to ones are Tomato, mozzarella, basil, balsamic Corn, black beans, tomatoes, cilantro,onion, avocado Penne, snap peas, garlic and parmesan Israeli couscous, cucumber, zucchini, squash, eggplant, zataar |
Cucumber, tomato, scallions, dill, oil
Quinoa, cilantro, scallions, cherry tomatos, lemon juice, olive oil Cucumber, eggs, dill, scallions, spinach, any other greens you have, mayo |
Tabouleh
Fruit salad (especially strawberries with bananas) Crab salad (imitation crab, grated cheddar, black olives, green onions, ranch dressing) - I serve with low salt wheat thins |
Nicoise - Tuna, green beans, sliced boiled potatoes, black olives, vinaigrette |
German "mixed" salad plate:
cucumbers beets radish carrots potato salad green beans marinated in vinegar and oil and placed separately around the plate--not tossed |
Chick peas (3), black beans (1), grape tomatoes halved, loads of chopped basil with a vinaigrette made with red wine & apple cider vinegar, olive oil, 3 cloves garlic & teasp of honey

Dice cucumber, red onion, red bell pepper and halve cherry tomatoes. Add Kalamata olives and feta cheese. Dressing: 1 crushed garlic clove, juice of 1/2 to a whole lemon, splash of red wine vinegar, oregano or Greek seasoning, a few glugs of olive oil and s& p. |

I love the lentils & feta salad that Breadline makes.
It's just green lentils with crumbled feta and red onion, parsley and a vinaigrette. So good on top of arugula! |
Avocado + Cherry tomatoes. Douse with olive oil. Sprinkle with salt, pepper, any other seasoning you like. |
