Vegetables for toddlers

Anonymous
I would love some simple recipes for preparing vegetables on busy weeknight evenings for young toddlers. I often serve mashed avocados, sweet potatoes, sauteed squash, grilled tomatos, but I would love some new ideas. Thanks!

My toddler loves (cooked) frozen peas/corn with melted butter and garlic (the prepared garlic in a tube). Very quick to prepare. He also likes steamed cauliflower which I sprinkle with grated cheese and brown under the grill.

Food & Wine recently had a recipe for baby carrots that my kids loved ... pre-cook some baby carrots until just tender. Sautee in some butter and soy sauce until they start to brown a bit. Drizzle with some honey and toss to coat.

My kids and many of their friends would rather oddly (for me) vote for broccoli as their favorite vegetable, especially with some kind of dip.

I second the broccoli as the go-to toddler food. I don't understand why my kids love it so much. One day they sucked all the water out of the florets and said they liked their broccoli cold and "juicy."

Mine loves raw carrots. I peel and cut up regular sized carrots, but leave them big enough so that I'm not worried about him swallowing the entire thing and chocking. It's great for his teething, too.

Mine loves boiled carrots with seasoning
I buy bags of those frozen mixed veggies, I think they are called Steamers. Those are always a hit.
Corn

My dd loves cucumbers.

I wish my 16 mo old would eat any of the above stuff!

Right now, we're limited to chunks of tomato in marinara sauce and beans... She takes her fingers and smooshes the peas or zucchini and chucks the broccoli directly on the floor.

I'm looking at all your ideas though, will keep trying.
