Anyone have a good butternut squash, acorn squash, etc., recipe to recommend, since squashes are in season (and cheap)?

This recipe for curried butternut squash soup looks yummy. I haven't tried it out yet but want to.

| Roast a halved spaghetti squash for an hour then dig out the insides with a fork and add a marinara sauce. Yum! |
| We just had acorn squash tonight. Halve and remove seeds. Microwave halved side down with a bit of water to steam (usally takes between 10-15 minutes) until tender. Broil cut side up with butter and brown sugar until edges start to brown. Easy and delicious. With butternut squash, cube into 1inch squares, toss with olive oil and brown sugar, season with salt and pepper roast at 450 until tender (between 45-60 minutes.) Also delicious. |

| Acorn squash; cut in half, scoop out seeds, poke with a fork, add a spoonful of butter/brown sugar or maple syrup/ a little salt and pepper, and roast in the oven at 375 until tender (prob about 30 min) Then just scoop everything out into a bowl once they are done |

slightly different style:
butternut squash, garlic, frozen okra, chickpeas all sauteed cooked in coconut oil with garam masala, cumin, some chopped small hot peppers, chili powder, turmeric and black mustard seeds. serve with rice. |
Even better with a little bacon. But then again, what isn't? |
