Menus for the coming week

my standard...
saute garlic, sliced mushrooms and canned tuna in olive oil. toss with pasta. voila. it is actually awesome...two cans of tuna for a family of four. also good with cherry tomatoes added...

Well on the menu for the week, we will likely be doing:
-One night of veggie/brown rice stirfry
-One night of veggie dumplings and tofu with peanut noodles
-One night of veggie tacos with tvp "meat"
-Perhaps a night of chili dogs with veggie dogs and veggie chili
-One night out to eat

My plan so far -

Pea soup in the slow cooker
Baked risotto with chicken, spinach and mushrooms
Buffalo roast in the slow cooker (first time - I'm a bit scared)
Sweet Potato and Chicken chowder

We'll have chicken soup (mon), okra and meat ragut eaten with rice (tue, wed and may be left overs for me for thursday), chicken parmesan with couscous and salad (Thu), pasta / pizza (Fr).

Trying to make foods that the 4 YO will actually eat that are not too high in carbs. And we only go to the grocery store once a week.

last night: black bean & cheese enchiladas
Mon: shake & bake chicken, green beans
Tue: smoked pork chops, acorn squash
Wed: lamb chops, sugar snap peas, baby corn & baby carrots
Thu: butternut squash soup (made yesterday)
Fri: pizza or dogs, frozen veggie du jour

M - Meatloaf (1/2 turkey 1/2 groundbeef)
T - Chicken w apricot glaze
W - Wildrice & corn casserole
Th - Spicy Chickpea Stew
F - Salmon

I'm feeling very lazy about cooking this week. I made some lentil soup yesterday for us to eat during week - we'll probably have that two nights. I also bought some chicken, and will likely make a stir fry with that and some cabbage that we have. Maybe baked sweet potatoes or sweet potato fries another night? We have house guests coming this weekend, so I plan to get a roast chicken and a couple sides for Friday night's dinner.

Question about the sweet potatoes: do you just peel the skin or do you also peel away the outer flesh until you get to the part that is dark orange ? I do the first, and they never look all that appetizing (roasted) although they taste good!

you can roast with the skin on or off.
