oh -- and it does not need to be diet friendly.

It just needs to be absolutely yummy. I want everyone saying "Wow, who made that amazing crab dip?!?!"

Heat oven to 350.

Combine in a bowl:

1 8-oz. package of cream cheese, softened
1 cup mayo
1 can of crab meat, drained
1 can of (unmarinated, water-packed) artichokes, chopped
1-2 cloves garlic, minced
1/2 cup grated parm cheese

(This doubles nicely for a bigger crowd -- but if so, just take the garlic up a bit, not precisely 2X.)

Stir it all together into a gloppy mess. Spread in pie plate or similar-sized baking dish and bake uncovered at 350 for 30-45 minutes until the top is brown and bubbly.

Serve with tortilla chips, sliced bread or veggies. Or eat the leftovers with a spoon after all the guests have gone home.

Clyde's Crab & Artichoke Dip is good too -- sounds similar to PPs. Make sure you bake it in a dish you want to serve it in -- you can't transfer it.

CRAB AND ARTICHOKE DIP RECIPE
(Serves six to eight)
This appetizer is convenient to make ahead of time. Heat it up when you need it. It has been the best-selling appetizer at Clyde's for years and it's definitely the recipe people request the most.
1 tblsp
butter

1/2 cup
finely minced onion

8 oz. packages cream cheese

1 tsp
Worcestershire sauce

1 tsp
horseradish sauce

1/2 tsp
Old Bay seasoning

5 dashes
Tabasco sauce

1
14 oz. can artichoke hearts

1/2 lb.
Crab meat, cartilage removed

1/4 cup
Parmesan cheese


1. In a sauce pot saute the onions in the butter until they are soft but not brown.
2. Add the cream cheese and stir it over low heat until it is soft. Add the Worcestershire, horseradish, Old Bay, and Tabasco. Stir until well blended.
3. Fold in the artichokes and crab meat.
4. Put the mixture in a shallow baking dish, one that is only about 1-1/2 inches deep. This is similar to the size of a 10-inch pie plate.
5. Sprinkle the Parmesan evenly over the top.
6. Bake in a 400 degree oven for 30 minutes. This cheese should be brown on top and the sides should be bubbling.

If you want to save yourself some time, Costco has an amazing crab dip (cold, not hot), as well as lobster dip and smoked salmon dip. They had them out for sampling the other day - really yummy.

My recipe is like 9:25's, except I don't use garlic; a few dashes of Worcestershire sauce give it that certain something.

I agree... "leftovers"? What's that?

(But the one time I did have leftovers, I dolloped the dip into a pre-made pie shell, covered with egg and baked a crab/cream cheese quiche. Amazing.)

No Bake, Crab Dip

Bring Cream Cheese to room temperature.
Add 1-2 Tablespoon of Mayo & dash of garlic powder.
Fold in chopped green onions & 1/2 container of crab meat.
Spread remaining crab meat on top.
Serve with Stoned Wheat Thins crackers.

This is always a hit at office parties.
