Company with questionable future

Would you take a new job offer, if the offer has great perspectives but not really great in terms of pay and hours. And your current job is great with great hours, huge bonuses but you realistically understand it has 3-5 years of life tops.
Would you change jobs now or would you milk this cow till she dies?

I don't know what you mean by "perspectives." But I would probably stay if you are enjoying what you're doing and feel like you have decent prospects for changing jobs down the line.

What gives you the impression that there are only 3-5 years left in your current company? Regardless, I'd stay for a bit longer until you find another job with equivalent pay and hours. You're not apparently at risk right now, so why jump to a job that offers you less?
