I'm going to be out of town all next week on my first vacation away since I had kids. DH will be home with the LOs. He can cook, but he's already doing a lot to make this possible so I'd like to have some things easy for him to either put in the crock pot in the morning or reheat/defrost. Also DH prefers to eat extremely healthfully- so lean, healthy options are ideal. The kids will eat anything so that's not a concern- they aren't picky.
I'm already planning on salsa chicken thighs in the crockpot (dump chicken thighs and a can of salsa in the crockpot- couldn't be easier) with a boxed salad mix but what else would work? Thanks! |

Roast a big pork putt and pull it apart. They can have it in tacos, sandwiches, or ramen. Ramen without the seasoning packet and with topping choices can be really fun. Have plenty of sandwich/panini fixings. precut all fruit and veg and have it in the fridge (watermelon, strawberries, carrots, celery, peppers.) Have a couple frozen pizzas in the freezer. Buy good bread. Have those premade raviolis or other fresh noodle pasta packs and a pesto and red sauce in the fridge. Shrimp in the freezer that he can quickly saute and a nice cut of fish to roast the first or second night. |

Marinated chicken skewers and vegetable skewers that he can throw on the grill one night. Have them already skewered and marinated, so all he has to do is fire up the grill.
Roast a chicken ahead of time, part it out and leave it in the fridge. Make a big salad, it'll keep for a few days as long as the dressing is kept separate; one night can be salad with shredded chicken. The rest of the chicken is great for sandwiches or just chopping up and eating plain. |
Zoodle a bunch of zucchini, it will stay for a few days raw. Make a meat sauce. Voila- he can put this together in minutes. |
