It's a nickname, so you can alter teh spelling at will. My BFF had a nickname always spelled with a -y, but in high school she decided to change it to -ie. And there it remained evermore.

How about Sammee?

I think Sammy, but as this PP said, nickname spelling is pretty flexible.
