Yeah, what is UP with cottage cheese lately? It is SO gummy, even the brand I buy at MOMs that I used to like. Good Culture or something like that?

Guar gum isn't toxic, but it's used to make bad food, by faking the "creaming" process, like the aforementioned "cottage" cheese |
It isn’t faking anything. It’s keeping a scooping consistency for longer. I make homemade ice cream occasionally. After a few days in the freezer, it gets icy and very hard to scoop. I get why commercial ice creams use them. I’d rather a little a little guar gum then twice the amount of fat and sugar Haagen Dazs uses to keep consistency. |
