What's the happy medium menu here?

OP here,

Our grill is charcoal so it would take too long.

We made tagliatelle and bolognese this weekend so we have both in the freezer, now I am thinking that, with a salad? I have a bunch of other sauces in the freezer if people don’t like bolognese.

For the picky people, is that better or worse?

Tacos or bbq chicken or pork sliders with homemade slaw were my first thought.

And I hear you! I also love to cook and tend to over deliver on casual get together s, but hey, that’s me.

This sounds perfect. Don't do any other sauce. Most people like bolognese. If the kid or mom doesn't want to eat it then simply serve that person buttered noodles. Have some shaved parmesan cheese on the side. Add in some garlic bread or Texas toast, a brownie for dessert, and you're done. Have fun!
