Suggestions for a beach vacation in December

I'm looking for specific hotel suggestions. I do not like big, all inclusive hotels. I would prefer to go somewhere Spanish speaking. 3 kids (8,5,2), and 3 adults and we need at least 2-3 bedrooms. The less travel time the better. I would love someplace walking distance to beach and a town with restaurants, etc. Since we barely ever travel, willing to spend extra money for a very nice place. Thanks in advance!

Can't help with the Spanish speaking part, but I wuod recommend a condo directly on seven mile beach on Grand Cayman booked through vrbo. Direct flights from Dulles on United.

get a condo in playa del Carmen. both kayak and booking.com showed 2 br options when I looked. you can probably find 3 easily too.
