Handling and stretching pizza dough: what's your technique?

We used to use a rolling pin, but have switched to stretching by hand.

What's your technique?

We try to make our own dough, but this week I have the premade dough balls from Harris Teeter.

I usually do a combination of rolling pin and hand stretching. When I stretch by hand I place them over my knuckles and gently stretch.

and key is to let the dough sit a long time at room temp. If it doesn't want to stretch it's "tight" just wants to relax a little bit. If you have the time, just let it be and it will stretch more later.

We usually let it sit for about 20 minutes. Are you suggesting longer than that?

NP, but I usually let mine sit out for an hour or two. Then I stretch by hand and do some spins in the air with the dough on my fists for the kids. If the dough won't stretch, I let it rest like PP recs, otherwise it will rip and that sucks.

I hold it by the edge and let gravity stretch it out. I slowly turn it so it stretches out evenly.

I let it sit out at least 30 min too.
