Cross country trip with toddler and new baby - advice and tips please!

So DH and I are planning to take a leisurely (as in slow) cross-country trip with our DD, who will be about 2 1/2, and DS (who will be about 2 months old). Au pair will be with us too. We have taken DD camping before, and she loved it, but we have decided against it for this trip as DS will still be too little. So one big decision we're trying to make is....where to sleep. Two options are staying in hotels (which probably means 2 rooms every night because of au pair) or a large RV. I see pros and cons to each, so would love to hear from anyone who did either/both and whether it worked for them.

I would also really appreciate general tips for how to make long car trips fun (or manageble) with kids this age. We will not be using videos (we're a no-TV family, even for adults, so this won't change for better or worse), but are planning on lots and lots of stops.
