What to do with leftover breakfast sausage? Dinner ideas?

I have a ton of leftover log shaped breakfast sausage, any good recipes to use it for dinner?

^ sounds good.. add some meatballs and make meatball subs.

Emeril's breakfast casserole is good.
I think breakfast sausage in marinara is sort of weird -- too sagey. If you want it over pasta, I'd do more of a cream sauce.

I just did he sausage and peppers. Added some black beans. Delish.

What is this "leftover sausage" you speak of?

Pasta indiavolata: Break up sausage and saute until nearly done. Add chopped greens or broccoli rabe and olive oil. Cook until greens are wilted or brccoli rabe is soft. Add a can of drained cannellini beans and a dash or two of crushed red pepper. Serve over pasta with grated parmesan cheese. That's what we're having tonight!
