Things to do in the Florida Panhandle

Beginning of May, gf and I(50s), will be staying near Seaside. We will have a full day and a couple afternoons to explore the area. The resort we will be at already has a nice beach, so going to another beach might be nice, but not necessary. Deep sea fishing is generally an all day affair, so not sure we want to be bound to that.
Anyone have any ideas or experiences in that area? We don't mind driving an hour or so any direction. We are both quite active, so hikes or other activities are fine.

Pensacola is an interesting town. You might check to see if the Blue Angels are practicing while you are there.

The Naval Aviation Museum at the Navy base in Pensacola is amazing (and free)! I've been going to Pensacola for years, first time to the aviation museum earlier this year.

Pensacola, although a great town, is over an hour. I'd personally drive it to see the Blues and for the museum, but you might not.

I'm jealous by the way. We go most years but didn't go last year.
Mostly we just chill at the beach and swim endlessly. I've seen sea turtles, Sharks (mostly babies, one harmless juvenile spotted by the lifeguard), manatees and many dolphins in the water. It's a gorgeous place.
