They were cooked with corned beef. Meat is gone. Looking for a way to use the potatoes and carrots. |
Bubble and squeak. |
Put them in a frittata |
Soup? |
Fry them up like breakfast potatoes. |
Chop them up and fry them with some onions... like a hash. Serve it as a side, as a veggie dish or put some fried eggs on top. |
Are they really soggy, or could you re-purpose them for a salad? |
Sautée onions, add them to the pan with chicken broth, purée for soup. |
Yep breakfast potatoes or potato soup. |
Not soggy but slightly meat flavored. Any soup recipe suggestions? I'm not a soup maker but sounds good. |
+1. You could even mash it all, add an egg and some flour, and form into patties--kind of between fritters and latkes. |
Sautee some onion and celery in butter and olive oil. Add salt, pepper, garlic, thyme, parsley. Add chicken broth and diced chicken and simmer for an hour. Add the potatoes and carrots until cooked through (15 minutes) then add some peas and egg noodles.
Soup! |
Dice, add to shredded chicken and gravy and put in a pot pie.
Mash together, brown some seasoned beef and make a shepherd's pie |
Shepard's or cottage pie. |
Saute onions, throw in minced carrots, potato, add peas and garam masala and/or curry powder. Stuff in phylo dough or egg roll wrappers or even cresent rolls and bake for a quickie somosas. |
