appropriate for a one year old - I'm talking, like, for when it's been a horrible day and I need something fast easy. Mine (which I got from DCUM, so thanks to whoever) is baked sweet potato with butter and cinnamon. Raw vegetables safe for a one year old also count as a recipe

My one year old loves frozen corn and peas... they probably feel good on teething gums. I use those to keep him occupied while I make dinner.
Other stuff: -steamed edamame (beans only) tossed with olive oil and sea salt -steamed broccoli florets with hummus for dipping. Half the time he just ends up dipping his fingers in hummus and licking it off, but I'm ok with that. -steamed carrot sticks with hummus for dipping Mostly, though, he just eats what we eat, cut up into small pieces. |

1. Remove bag of frozen broccoli florets from freezer.
2. Shake some on to a plate. 3. Cover with a wet paper towel and microwave 60-90 seconds. 4. Trim and cut into bite-size pieces. 5. Serve. This is really on the only vegetable - unless its in a pouch or a smoothie - that my toddler will eat on a regular basis. |

Edamame, peas or broccoli steamed and served right up. She loves all of them.
She also likes roasted veggies like broccoli or cauliflower. Just tossed with olive oil, and a dash of salt and pepper. |

Diced cherry tomatoes (also maybe a fruit?) Broccoli or cauliflower tossed with jarred pesto Edamame Strips of bell pepper I like the idea of steaming carrots..I'm going to try that. No luck with greens so far, cooked (collards, kale, etc) or raw (spinach, lettuce). |

Canned or frozen peas, corn or cut green beans.
Broccoli florets (frozen or fresh chopped cooked in boiling water three minutes) tossed with olive oil or butter, sometimes sprinkled with parmesan. Baby spinach sautéed in olive oil and garlic. |

Pickles
Cucumber slices/pieces. Steamed butternut squash cubes with a little butter, maybe brown sugar and cinnamon. No or low sodium canned green beans (cut) or steamed green beans (whole). Eggplant (roasted) with olive oil and garlic. |

My toddler loves all roasted vegetables - Cauliflower, Broccoli, Sweet Potatoes, Carrots, Brussels Sprouts, Winter squash, Eggplant are his favorites. I roast them in a 400F oven with either olive or coconut oil and salt.
He also likes sliced cucumbers raw. |
