Food project suggestions

DH does a fair amount of travelling in the winter, and for some reason, he always goes during the weeks when the weather turns most miserable. I usually kill some time by busying myself at home with cooking something that takes time and effort. Examples would be soup dumplings, Momofuku pork buns, stuffed pasta of some sort, etc.

Does anyone have suggestions / recipes for a labour intensive food "project" to make? I have a well stocked kitchen in way of ingredients and tools, and provided I can get the ingredient at this time of year, willing to do so. Would prefer something savoury to dessert type suggestions, but willing to make something sweet if the right recipe crosses my path.

Spanakopita, empanadas or samosas can be somewhat labor intensive.

You MUST try Thomas Keller's Onion Soup. The recipe is from his Bouchon cookbook, but also online. It is TO DIE FOR. I make it every once in a while, and it has become the gold standard, even when we go out to nice places with the family... "Oh this one is not as good as what you made." Which is flattering, even though it's not my recipe, but also frustrating when you just paid $10-15 for that bowl of soup

Look at the Bar Tartine cookbook. Plenty of intensive projects there.

Get a fermentation crock and time it so you have to can when DH is away.

Good job digging this up, PP. I remember this thread too. It was a good one. I actually made beef bourguignon over the summer because of this thread and it was fantastic. It's a winter dish though, so I consider that one a trial and I'll be making it again...

Making lobster bisque from scratch... best thing I ever did, and it took an entire day.

Also roasting a duck. That was different but delicious!

Cassoulet is a challenging one. I don't have a good recipe for it so post one if you find one!
