Backsplash: how high?

Oh the details.
Just realized there are many different ways to do the backsplash.
Just doing subway tile. Is the basic approach a level height across with paint above. Or all tile up to the cabinet line? And what about the full wall behind the over (we're putting in an oven hood). And the wall opposite the kitchen sink/oven appliances (wall with more cabinets...)...I'm thinking no backaplash on that side, right? (It's a rowhouse galley kitchen)
