To answer your question - please get vaccines for Japanese Encephalitis and anything else recommended. A friend became only the 13th American to survive it after a trip to Vietnam. She's still considered legally disabled years after.
I agree with you, we also had 3 weeks and stuck mostly to Vietnam, with a couple days in Siem Reap at the end, and was left wanting to see more of Vietnam. However, based on their itinerary, it sounds like they are big city people and have a tour to coordinate their travel. Personally, I can only take so much time in the big cities, we enjoyed other parts of Vietnam more, but everyone is different. Have fun OP.
1. Traveling with elderly mom - it was she who planted the destination idea in our head. As such....yes, definitely using a semi-custom tour (I didn't want to deal with flights between countries and transportation to/from attractions).
2. We are not resort/lay on the beach people and neither are we truly "city" people.
3. We do have non-city destinations/trips built in. I mean, what do you call Halong Bay (overnight cruise), Cu Chi Tunnels, Mekong Delta, Angkor Wat, Tonle Sap Lake, Ayuthaya, and finally in Chiang Mai to see white/red/blue temples plus long neck tribe.
