seeking Vegetarian potluck dish suggestions?

I'm drawing a blank, and need to come up with a delicious vegetarian dish to take to a potluck next Saturday. Any suggestions?

Does not need to be vegan, but preferably vegetarian and main-meal or side. Possibly served cold, or at least will hold up with a 60-90 minute car ride.

What's good to make?

Well, normally I'd say chili, spring rolls, Thai coconut soup.. but since it might be served cold-ish, I wouldn't take any of those. I might do something like roasted green beans/ shallots/ mushrooms, or Moroccan roasted veg.

We make this awesome, protein rich black eyed pea salad that is perfect for end of summer and easily adaptable to whatever veggies you have around.

I do a cup of canned, drained bep per person.

This is my usual:

3 cans drained rinsed black eyed peas.
1 small chopped red onion
1 chopped yellow bell pepper
1 chopped orange bell pepper
1 pint grape tomatoes, halved
16 oz sugar snap peas, halved
1 bottle Girard's champagne dressing

Delish warm or cold.

I made a really good chickpea and butternut squash salad that was well received for the last potluck I went too. I just found it by googling-don't have the exact recipe anymore.

Roasted purple cauliflower. Cut into bite sized pieces.
Pecan halves.
Browned onions.
Mix the above ingredients together.

Corn, bean , tomato, avocado and bell pepper salad, with honey-lemon vinaigrette & crunchiness on top

I make a corn, black bean and tomato salad with cilantro vinagrette.

How about a platter of roasted vegetables?

Hummus or baba ganoush with vegetable crudites and pita wedges for dipping.

kale and quinoa salad? I don't have a recipe but I bet there are tons online.

Cold noodles with peanuts. soy sauce. egg/tofu, scallions, cilantro, red bell peppers, edamame.

Quinoa, corn, black beans, caramel oozed onions, halved grape tomatoes, cilantro, dressing of lime juice/canola oil, a bit of cider vinegar. Dash of cumin and lots of salt.

A chickpea salad. Try chickpeas, tomatoes, cucumber, Kalamata olives, red peppers, and dill, with some olive oil, lemon juice, and salt and pepper. Garnish with feta cheese.

Or try sauteing jalepeno peppers and garlic, and mix chickpeas with the peppers, tomatoes, corn, red onion, and grated cotija cheese.
