Your favorite copycat recipes

I've made before and am making tomorrow a copycat recipe of Chipotle's barbacoa beef. It's come out wonderfully the past 3 times or so I've made it over the last year. We'll do build your own burritos tomorrow night, then save the rest and make quesadillas later in the week. Sometimes we've even frozen some when I make a lot and it defrosts and reheats really well.

Also, I've made Chili's southwestern egg rolls (appetizer) a few times and they've been a hit with everyone at tailgates/parties. Use mini tortillas and cut them in half after cooked to serve with some dipping sauces.

Anyone have any copycat recipes they really like?

I just substitute veg chicken and they are vegetarian. And absolutely delicious!
