Anybody BTDT temporarily dismantling part of kitchen for water remediation ?

Looks like we have to dismantle part of our kitchen for water remediation and damaged floor removal. That means removing gas range and sink, removing two parts of granite countertop (an "L" with a seam filled with epoxy), and removing a few ikea cabinets. After the work is done, all will be re-assembled. I am concerned about granite or the (discontinued and hard to replace) cabinets getting damaged. The remediation company will subcontract that to an specialist -- I assume they do this work all the time.

Anyone BTDT? Is it routine to dismantle and reassemble a kitchen without damage? And what do people with kids do when the kitchen is out of comission for a few weeks? Do people put the temporarily removed cabinets in the dining room and re-place the usual stuff inside?
