Our schedules are about to get very busy during the week, so we are looking for some make-ahead breakfast ideas. I've made crustless quiche in the past, but didn't love it.
Please share your crustless quiche recipe, and any other make-ahead breakfast recipes. We don't do carb-heavy breakfasts, so try to avoid waffles, pancakes and the like. |
| I typically just use ricotta cheese, eggs, seasonings and then throw in whatever else I have in the fridge to make it more substantial (veggies, meat, etc.). I know that's not what you are asking - I am curious to see the responses myself- but quiches can be really low-maintenance if you want them to be (and are busy otherwise!) |
| Skinnytaste has several variations on crustless quiche recipes; check it out. DH and I are into yogurt/fruit/granola these days - easy to make ahead (put the yogurt + fruit in one container, granola separate and mix when eating). |

| I really like eating dinner leftovers for breakfast now that I eat lower carb. It seems weird to Americans, but I am happy (and full) eating some leftover chicken and roasted veg. It's super fast and assuming dinner was a healthy choice, it makes a healthy breakfast. Just what works for me, may or may not work for you. |
| If you eat some carbs, a whole what English muffin toasted with a slice of mozzarella on top nd maybe a slice of tomato too is very tasty. Or a whole wheat tortilla microwaved with shredded cheese and rolled up -- a very fast breakfast that can even be eaten in the car. |
